Rabbit meat in tomato sauce with garlic served with pasta

Cut the meat, wash it and add salt and paprika. Put it on the fire in a pan with hot lard and cover with a lid.

Peel two onions and two cloves of garlic and wash.

Carrots, parsnips and celery are peeled and washed.

After the meat has simmered a little, add these vegetables and about 300 ml of water, to begin with. Leave it to boil, covered with a lid, and add water, if necessary, until the meat is tender. Towards the end, remove the vegetables from the pan, and the whole canned tomatoes are passed through the food processor to obtain juice. Pour over the meat and add a green rosemary cracker, a green basil leaf and a dried bay leaf. Continue to cook until the sauce decreases, then add 3 cloves of garlic (peeled, washed and sliced) and green parsley (washed and chopped), then take the pan off the heat.

To prepare the spaghetti, put water and salt to boil and when they boil, add the spaghetti, boiling according to the instructions on the package. Drain in a sieve and rinse with warm water.

Put 1/6 of spaghetti and a piece of meat with sauce on a plate.

This rabbit recipe in the oven in white sauce can be prepared for Easter, Christmas or any other occasion when you want to caress those close to you.

On my son's birthday, we enjoyed this rabbit food in the oven, eating 5 people (3 adults and 2 children) and we had it for the next day. I combined rabbit meat with mashed potatoes and a fresh salad with radishes.

For a grade 10 result, I recommend marinating the meat the day before to get a fine meat that comes off the bone.


Preparation:

Finely chop the onion and put it to harden, in a thicker pan. We add a pinch of salt and a pinch of freshly ground pepper. When the onion is hardened, add the mashed tomatoes. In winter, I usually use mashed tomatoes, bottled, flavored with herbs or garlic. In summer, when I use fresh local tomatoes, I add a teaspoon of sugar to reduce the acidity. Let it simmer slowly over low heat. Add the chopped garlic cloves before putting the spaghetti over the sauce.

Put the spaghetti to boil in salted water for 6-7 minutes. We like them to be al dente. When they are ready, take them out and put them over the tomato sauce. Pasta is not washed when cooked with sauce but only when used in salads. The starch left, by boiling, on the pasta, helps the sauce to adhere. We stop the fire. Chop a handful of basil leaves and put them over the pasta. Stir gently to wrap the pasta and leave them for 2-3 minutes for the basil to leave its flavor. When we eat, if we want, we grate the Parmesan spaghetti. This way we get, very quickly, pasta with tomato sauce, tasty and filling.

  • -2-3 tablespoons olive oil
  • -a few fresh basil leaves or 1 teaspoon dry
  • -1-2 cloves of garlic

  • -300-350 g paste

As I told you for some time, we try to use only products from the in-laws' household or from the grandparents. And as one calf is slaughtered each year, I caught the taste of spicy and smoked veal. A kind of sheep pastrami :)
This time I prepared it in the oven, with tomato sauce. It turned out very good !!
