RECIPE PREPARATION Brain bread from Bucovina:
First of all, the brain must be washed and boiled for approx. 20 minutes with a little salt and pepper (or other spices you use). While the brain is boiling, beat the eggs well with salt and pepper and then put the flour on a plate and the breadcrumbs on a plate.
After the brain has boiled, strain it and leave it to cool for about 10-15 minutes. and we pass it through flour, egg and then breadcrumbs.
Heat the oil and then when it is hot enough we put the pieces of brain. Leave it on medium heat until it catches a golden rib. Remove it on the absorbent napkins to draw the oil.
You can make larger or smaller pieces - depending on your preferences.
