Countertop:

Beat the egg whites with a pinch of salt, then add the sugar, and at the end we put the mixture of flour, cocoa and baking powder, passed through a sieve. Stir gently from bottom to top.

Bake the top in a large tray (30 cm x 40 cm) lined with baking paper, until it passes the toothpick test.

Cream of ... hac !:

Mix the yolks with the sugar and alcohol, then move to the steam bath until it thickens a little. Remove from the heat, add the grated chocolate and essence and stir to melt everything, then leave to cool a bit. Meanwhile, beat the whipped cream well and then pour the cream into the whipped cream and mix well.

Assembly:

Syrup the top with the liquid from the compote, spread the cream, then decorate with the fruit pieces and let the cake cool.
