I crushed the biscuits and mixed them with the melted butter, then I put them in a heart shape. A silicone form is very useful, otherwise it would be quite difficult to remove the cake from the tray. I had a heart-shaped plastic that I sacrificed in the end, being necessary to cut it to remove the cake. I pressed the biscuits in this form and left it to cool until I prepared the cream.
I hydrated the tea in 130 ml of warm water for 2-3 hours. Because the tea contains pieces of cinnamon and star anise, which are quite strong, I chose to take them out. I heated the tea and water in which they stayed for a few hours together with agar agar. I only let it boil for 2 minutes. I kept the sour cream mixed with 3 tablespoons of fructose until I got the whipped cream. I mixed the cream with the tea after it cooled. I put this cream over the biscuits and left it cold in the fridge until the next day.
I boiled the strawberry juice. I mixed the jelly cake with 1 tablespoon of fructose and 3-4 tablespoons of juice. I added the jelly cake to the juice and boiled for 1 minute. I took the cake out of the mold and placed it on a plate. With the help of a spoon I poured a little jelly on top of the cream. The cream being cold, the jelly hardens very quickly. It takes a little patience until all the jelly is added. I removed the excess jelly that leaked on the plate when it hardened.
